Au Gratin Potatoes


3 lbs. kennebec potatoes, peeled, & sliced thin
2 c. cream
1 T butter

4 oz kosher salt
2 oz parmesan cheese
1 T Thyme
8 oz cheddar cheese
salt & pepper

Procedure: Toss sliced potatoes in salt. Let sit in colander 15 minutes. Liquid will drain out. Rub ovenproof casserole dish with butter & layer drained potatoes, seasonings & cheeses, ending with cheese. Pour cream over top, cover with foil & bake @ 350º for about 1 hour, uncover last 5 min. to brown.
