Pomegranate, Bacon & Gorgonzola Salad with Honey Red Wine Vinaigrette
& Toasted Walnuts

1 pound baby mixed greens
1 pomegranate, broken apart into gems
8 slices thick cut bacon – cooked, drained & chopped
0.5 cup shelled walnuts, toasted & crumbled
0.5 cup crumbled gorgonzola cheese

Red Wine-Honey Vinaigrette
1 shallot minced
0.5 cup red wine (like Barbera)
0.5 cup aged balsamic vinegar
1 lemon juiced
3 T honey
1 T parsley chopped
1 tsp Dijon mustard
0.25 t white pepper
0.5 tsp black pepper
0.75 tsp kosher salt
1 cup olive oil
1 cup canola oil

Procedure: Combine all ingredients except oil. Emulsify oil with whisk or hand blender.
Assembly: Toss greens in vinaigrette, place on 4-8 cold plates, arrange components atop.
