Florentine Fish Spread for Crostini

Makes 1 cup

Served in trattoria in Florence, delicious with bread sticks or fresh vegetables such as celery, fennel, cucumber and summer's colorful bell peppers. Very pretty served in pulp free lemon halves surrounded by crisp crostini.

6 oz. cam albacore, drained 3 tablespoons good quality olive oil
4 tablespoons softened butter juice and grated zest of one lemon
1 teaspoon minced garlic 1 tablespoon minced fresh oregano
1 tablespoon minced Italian parsley Salt and pepper to taste

Place all ingredients in powl of food processor and pulse until smooth. Serve immediately or refrigerate up to 5 days.
