Le BistroFor three decades the establishment that defined fine dining in Stockton has been Le Bistro. It has long been part of the local social scene for politicians, celebrities, and socialites who seek the place where superb cuisine is served in a luxurious atmosphere.

During our recent visit we examined the physical changes now taking place and met the team of people who are working to further enhance Le Bistro’s standing. Those who venerate San Francisco fine dining will appreciate the exciting changes taking place at Le Bistro. Owners Bruce and Matt Davies hired San Francisco designer Tim Murphy to create a $750,000 renovation that will make Le Bistro the most exclusive venue in the area.

New to the team is General Manager Greg May. He has 22 years experience in the restaurant business and is in charge of restaurant, banquet, and catering operations. Le Bistro has also acquired the services of Executive Chef Richard Hyman (see Bio.) who is revered by his followers for his unique culinary interpretations.

The recently developed new menu is configured somewhat different than previous offerings. It has “Small Plates and Appetizers”, “Salads” including two tableside presentation salads, “Large Plates, and Entrées”.

Our server Reuben brought us a glass of Rosenblum 2006 Lodi Viognier to begin our meal. We started with some of Chef Richard’s new appetizer creations. Two are based on the finest quality highly marbled tender meat seasoned with savory flavors. Crepinette of Wagyu Beef Short Rib is braised for 12 hours and served with Caramelized Maui Onion, Upland Cress Salad, and Strawberry Gastrique. Crisp Bledsoe natural pork belly served on a bed of finely diced granny smith apples and served with a pork jus flavored with fresh thyme and apple cider. Wild Scottish Salmon with crème cheese is a wonderful delicacy served with shallots and capers. We found all three of these appetizers to be scrumptious.

There are six interesting salads including two that are tableside presentation salads. We enjoyed the fabulously fresh Autumn Vegetable Salad that featured unique greens tossed with fall vegetables and herbs including beet, peas, carrots, and fennel and topped with lemon dressing.

Chef Richard describes his cuisine as Contemporary American. The recent menu changes reflect his skill at orchestrating flavors that please the palate in a distinctive way. We had enjoyed his creations in the past and looked forward to exploring more of his innovations.

Rosemary Grilled Loin of Colorado Lamb with rosemary demi glaze was divine. Herb roasted baby red potatoes and summer vegetable Fricassée rounded out this magnificent meal. Pan Roasted Maine Diver Scallops were large tender morsels topped with Verjus bubbles and paired with toasted Marcana Almonds and Baby Patty Pan Squash. Sautéed Medallions of Kurabuta Pork Tenderloins is prepared with fresh Thyme Beurre Rouge reduction sauce for a succulent flavor and melt in your mouth texture. Le Bistro features about 12 entrées ranging from $24 to $38.

Le Bistro has no peer in the area with its selection of wines and spirits. Its wine selection is vast enough to earn them the Wine Spectator Award of Excellence. They offer over 400 wines, specialty libations, and premium spirits. For those who prefer a more casual dining experience, dinner can be served in the newly remodeled bar area equipped with a number of plush tables. Sommelier Roger Todd is a skilled wine pairer who will be pleased to assist you in your selection.

Le Bistro has some hot choices for dessert—literally. Crepes Suzette, Bananas Foster, Fresh Fruit Flambé, and Café Diablo are prepared tableside with a flourish that includes a brandy-fueled flame for your amusement ($15). Dessert Soufflés ($12) are also a specialty but must be requested 20 minutes in advance. Chocolate and Grand Marnier are the most popular flavors. More conventional desserts ($8-$9) include Crème Brulee, House made Sorbet, Vanilla Gelato Sundae, and Pâté au Chocolat. It’s worth saving room for these celebrated treats.

Le Bistro is also a great place to hold a wedding reception or meeting that is sure to impress. There are four private rooms available to accommodate events from 10 to 200 guests and a variety of banquet menus. They can supply audio/visual services such as television/VCR, projectors, screens, and wireless access. Also available is outside catering for corporate events, wedding or other special occasions. Le Bistro is a top-drawer facility that provides high quality dining, the areas largest selection of liquid libations, and stellar service in a fresh modern facility. The remodeled dining room now includes a number of walled booths for those situations where privacy and quiet are important. Be it an intimate dinner for two or an event for 200, Le Bistro can make it an occasion to remember.

Le Bistro is open Monday thru Saturday and closed Sunday. The lounge opens at 4pm and the dining room opens at 5pm. Special event hours are according to your needs.
