SEVICHE INGREDIENTS: 1lb. calamari cleaned & cut into rings 1lb. diced sole or other whitefish 1lb. baby shrimp juice of 7 limes 1 jalapeno seeded & minced 1/4c cilantro leaves 1 red bell pepper small dice 1 red onion small dice 4 T salt 1 t cayenne 1t cumin toasted

Welcoming the heat & spice of the summer sun bearing down with a glass that cuts a hot summer day into a series of sultry sips. A cool pool of roses to dip your stress into. Often made from Sangiovese or Pinot Noir with very light skin contact, Rosato is a style of wine best served young & just slightly chilled. It can be both crisp & rounded, with a good amount of acid and alcohol. Freshly marinated Seviche, a squeeze of olive & lime and a glass of Rosato. The world is indeed a rosy place.
PROCEDURE: Marinate all ingredients together in lime juice & salt overnight chilled. Serve with sliced avocado, fresh tortilla strips & ripe diced tomato.
